Whew. March was just insane. We threw a lot at you because it was our anniversary, but in the process our cooler is almost empty! We are catching up though - above are five beers coming at you this month...and things don't look to slow down much in April...

We brought home our 3rd NYS Gold medal this past month...and never saw so many people suddenly take an interest in Saison! We were hoping for our fifth medal in five years (really four...we opened too late to enter in 2019) but came away with a sixth! This year's competition was the largest statewide so far (and is the second largest in the country), so we are humbled and honored to ever walk away with any awards among a stiff field of talented brewers.

Medals so far (but who's keeping track) include:
  • 2024: Gold: Saison Blend One, Bronze: Kettle Lakes Coconut Cream Ale
  • 2023: Gold: Hyphen (Session NEIPA)
  • 2022: Gold: L.A.B. Blend Two (Wild Ale); Silver: J.B. You're Dead To Me (Brown Ale)
  • 2020: Bronze: Richard, Or Is It Dick? (Hazy Pale Ale)
We are on the hunt for another taproom person, so if you know anyone who loves craft beer and wants to be a part of what we got going on here, send them our way! Ideally this person should be outgoing - a huge portion of our success so far can be credited to amazing customer service by our staff - and available for 2-3 shifts Thursday-Sunday.  Pay starts at $10/hour plus tips. Tips are pooled only with other taproom servers, and only during shared shifts.

Below are upcoming releases for April:

Schwarzbier - 5.6%ABV 
Release date April 20, 2024 

This delicious German-style black lager presents with a slight roastiness but no bitterness for easy drinkability, and comes with it's own party!

Schwarzfest 2024 is Saturday, April 20, headlined by Fritz's Polka Band!

Kettle Lakes Stout - 4.4% ABV
Release date TBD

This is our Oatmeal Stout. Our Kettle Lakes ​series of beers are recipes we are set with - house recipes you would say, paying homage to the Kettle Lakes in Tully and Preble - and we added the Oatmeal Stout to the series this past fall, with minor modifications to the original. 

This is a NYS farm beer - we are so excited to be working with Murmuration Malts to develop more and more NYS farm beers - after all, that was our original intention when we opened in 2019.

Aesthesis (Blueberry Mango Vanilla) - 4.6% ABV 
Release date TBD

Next up in our super popular Aesthesis series, we blend the sweet-tartness of the blueberry with jammy mango goodness, and wrap it all in vanilla. Our Aesthesis sours are not kettle sours or smoothie sours, but rather involve a proprietary copitch yeast-driven process to offer drinkers a refreshing choice in fruited beers.

This is a NYS farm beer!

Cream of the Crops - 7.0% ABV
Release date TBD

Second in our Cream series of Hazy IPAs, Cream of the Crops mirrors the surprise hit of Cream of the Kettles that was out this past winter. This series includes an addition of a little milk sugar that supports our already superfly super fluffy hazy IPA malt base, and Cream of the Crops was hopped with a robust blend of Citra, Simcoe, and Strata.

False Header to Remain - 6.8% ABV
Release date TBD

We brought back the best of our False Header series - the Citra & Mosaic version - and added Idaho 7 and an adjusted hopping schedule for a hazy IPA that packs a delicious punch from start to finish.

We're always thinking of new things - wait till you see what we have up our sleeve. Our cold fermented Neopolitan pizzas with wood fired personality have opened up a whole new creative spark in Brian, and we're excited to share them with you! We also have gluten free cauliflower crusts for you to try as well.

ONCO Fermentations, Inc. is an award-winning nanobrewery and tasting room brewing up small batches of well fermented beer since 2019 and cold fermented pizza since 2023.

If you're new to ONCO or haven't visited in a while, we offer one of the most unique and flexible multi-zone gathering spots in CNY. There's always a space for you, inside or out, to spread out and be yourself, participate or not, in what we may have going on. Our fireplace is lit on cool days in the back, and we are restocked on firewood for our three self-serve outside firepits (just ask staff for firestarters and matches if needed!)

Also, in case you didn't know, we do rent out part or all of the Back Space for semi-private or private gatherings up to 100, and can work with you on a menu from our kitchen or you can work with a caterer.
