Downtown St. Petersburg’s Greenstock launches with build-your-own salads

In soft-opening mode, the new restaurant is led by Il Ritorno chef-owner David Benstock.

Il Ritorno owners Erica and David Benstock and local entrepreneurs Brooke and Peter Boyd have brought their create-your-own-salad restaurant to downtown St. Petersburg.

Operating 11 a.m. to 8 p.m. daily while in soft-opening mode, Greenstock features seven chef-inspired salads and wraps at 449 Central Ave., plus the customizable “you-inspired” option that loads a wrap or salad with your greens, proteins, toppings, finishes (think toasted pepitas or red pepper flakes) and dressings of choice. Premium add-ons include jicama, watermelon radish, figs, avocado and burrata.

Led by chef David Benstock, the restaurant puts an emphasis on fresh, sustainable ingredients and a no-cans-allowed policy. The dressings and tuna salad, for example, are crafted on site, and the wraps are made daily by EDGE District Mexican eatery Red Mesa Mercado. Dishes start at $9 and go up from there depending on your desired protein.

Greenstock, which you should note will be closed on Dec. 22, marks the second St. Pete concept for the Benstocks, who debuted their celebrated modern Italian restaurant Il Ritorno on the same block as Greenstock in 2013.
